Smoky grilled zucchini flavour complemented by the sweetness of the honey just takes this simple dish to another level of sophistication.
2 large zucchini
2 cups baby arugula- washed and dried
50 gr goats cheese - may use feta
2 tsp toasted sesame seeds
1/4 c Toasted sesame oil
A drizzle of honey
Slice the zucchini lengthwise into 1 CM strips - Generously salt the zucchini strips and allow the water to drain (20 mins) then tap dry with a paper towel.
Heat your grill, spray a neutral oil (I used avocado oil) and on a high heat- grill your zucchini slices.
Flip, grill, enjoy that sizzle 🔥
Meanwhile, prepare 1 plate with paper towels to drain the oil. Remove zucchini when ready and place on that paper towel to drain the oil.
Plating: massage baby arugula with toasted sesame oil, place zucchini on top, crumble your cheese and drizzle that honey, honey. 🍯 sprinkle those sesame seeds & devour 🤤
